C hicken P iccata Pasta
8 oz. spaghetti 1 cup fresh flat-leaf parsley, divided 1 lemon, zest and juiced 1 lb. boneless, skinless chicken breasts, cut into strips kosher salt Pepper 2 Tbsp. olive oil 4 clove garlic
1 Tbsp. capers ½ tsp. crushed red pepper flakes ½ cup dry white wine
Directions 1. Cook the spaghetti according to Microwave Pasta Maker directions. Drain the pasta and return it to the pasta maker; then toss with ½ cup parsley and the lemon zest and juice. 2. Season chicken with salt and pepper. Place chicken in the SmartSteamer Base, taking care not to block all the holes. 3. Fill the Water Tray with 1¾ cups chicken broth. Place SmartSteamer Base and Colander Tray over the Water Tray. 4. Cover and microwave on high power for 12-14 minutes or until no longer pink. 5. In a small sauce pan add remaining ingredients and cook for 1-2 minutes. 6. Place pasta in a pasta dish, cover with chicken and pour sauce over chicken, top with remaining parsley.
