Caprese Panini
Ingredients Italian Garlic Mayo ½ cup mayonnaise ¼ tsp. Italian seasoning 1 garlic clove, peeled Salt and pepper to taste
1 medium tomato, sliced thin 12 fresh basil leaves
4 (1-inch thick) slices Italian bread 2 Tbsp. prepared pesto, divided 6 slices fresh buffalo mozzarella, about ¼-inch thick Directions 1. In the SuperSonic Chopper Compact, add mayonnaise, Italian seasoning and garlic. Add kosher salt and pepper to taste. 2. Spread mayonnaise mixture on all sides of each slice of bread; set aside. 3. Place one slice of bread in the MicroPro Grill. Spread half of the pesto on bread; add 2 slices of mozzarella, half of the tomatoes, and half of the basil. Top with 1 slice of the mozzarella and 1 piece of the bread. Repeat with remaining ingredients, set aside one of the sandwiches. 4. Place MicroPro Grill cover on top of bread in GRILL position; microwave on high power 3 minutes. Remove from microwave, flip sandwich, replace cover and microwave on high power 1 minute more or until both sides are toasted and cheese is warm and melted. Repeat with second sandwich. Serve warm. 70
