Seasoning 1 Tbsp. Italian seasoning ½ tsp. garlic powder ½ tsp. black pepper 1 tsp. paprika ½ tsp. dried minced onion
1 Tbsp. vegetable oil 2 lbs. chicken pieces, legs, thighs, breast 1 bag frozen California mix vegetables (broccoli/carrots/ cauliflower mix)*
4 medium Yukon gold potatoes, cut into ½”chunks ½ med onion, chopped Directions 1. Mix together, Italian seasoning, garlic powder, black pepper, paprika and minced onion, set aside. 2. Cut potatoes and onions in chunks, put in the Stack Cooker Colander, add frozen vegetable mixture & sprinkle ¼ of the seasoning mixture. Mix well. 3. Drizzle oil over chicken pieces, then coat with remaining seasoning mix, place on top of vegetables. 4. Place Stack Cooker Colander onto the 3 Qt. Stack Cooker Casserole. Cover. 5. Microwave on high, 8 minutes per pound, approximately 15-18 minutes. Check to make chicken is no longer pink.
* You can use any frozen vegetables
